Yesterday was our friend Mandy’s birthday, and Miss Mandy LOVES limes. You know, she’ll buy them to just slice open and eat. (eww.) So for dinner, I made all lime-themed dishes. The menu was:
Chile-Lime Roast Beef Sandwiches
Cilantro-Lime Roasted Corn
Tossed Salad w/ Lime Vinagrette
Key Lime Tarts
The corn was a huge hit. So the recipe is below. Delicious!
Cilantro-Lime Corn
6 ears of corn
1/2 stick butter
1 lime – juiced and zested
2 T roughly chopped cilantro
1/2 t. cayenne
salt and pepper
Melt the butter and add in lime juice and zest, cilantro, and cayenne. Then salt and pepper to taste. Place corn on sheets of aluminum foil, and brush butter mixture generously over each ear. Close aluminum foil packets and roast at 400 degrees for 25 minutes.
