Cucumbers are way underrated. When I was a kid, at nearly every meal during the summer, the table greeted me with a plate of sliced tomato and cucumber. Now, the tomato and I took a while to warm up to each other, but cucumbers – we’ve always been close. I would gobble those things up quicker than you could say caterpillar. I’m not sure why the tomato and cucumber made the cut (with an occasional appearance from a green onion), but not, say, peppers or other vegetables that were plentiful in the family garden, but nothing says summer quite like a fresh cucumber.
Fast foward to my adult life, and there is nary a garden on my property (something I hope to remedy next summer), and I’ve noticed that the cucumber has been conspiculously absent from my house, as well as nearly everywhere else. I mean, some people really dislike them (although I don’t quite understand why). But I don’t know of a restaurant within a 50-mile radius that features cucumber in a dish. Outback even took them out of their salads! Blasphemy.
So in an effort to redeem the cucumber, I created a cucumber bacon salad born from my favorite things left in the bottom of my homemade salad bowl (after the lettuce and croutons have disappeared). Enjoy!
1 cucumber, peeled and chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
4 slices of bacon, cooked, cooled, and chopped
1 lime, juiced and zested
1 T Olive oil
Salt & pepper to taste
Combine all ingredients and dressing, refrigerate. Serve the same day.
