When Mason was a newborn, I ate oatmeal nearly every morning (for it’s reported pro-lactive properties). I still make oatmeal at least once a week, typically more. I’m not talking about the instant pour a pouch in some water stuff. I mean the real Old Fashioned Rolled Oats. I recommend Bob’s Red Mill brand, but if you have to use Quaker, so be it. Most mornings I do raisins, brown sugar, maple syrup, cinnamon. You know, the usuals. But today I threw in some almonds and chocolate and it was delicious. Like a warm cookie in a bowl. Try it!
Chocolate Almond Oatmeal
Bring four cups water and a pinch of salt to a boil. Add two cups of rolled oats and cook according to package directions. Once cooking is complete, add in 2 tablespoons of sugar, 2 tablespoons of dark chocolate chips, 1/4 t. almond extract and 1 tablespoon slivered almonds. Stir together until chocolate is melted and mixed through. Eat.
Note: This recipe is not super sweet. It isn’t dessert, you know. Feel free to add more sugar or artificial sweetener to taste.
